Vegetarian Sausage Rolls
Ingredients:
- 1 cup rolled oats
- 1 onion finely chopped and fried
- 1-2 tablespoons soy sauce
- 1 egg - lightly beaten
- 100 g fetta cheese - crumbled
- 2 zucchini grated
- 1 tablespoon peanut butter
- 2 tablespoons sunflowers seeds
- puff pastry
Method:
- Mix everything together (except puff pastry), let stand 15 mins.
- Pop into puff pastry
- set out a line of mixture along edge of pastry
- brush 3-4cm strip of pastry next to mixture with milk
- Roll pastry around mixture one layer except base which has
2 layers (the milk will help the 2 layers stick and form a strong base)
- Cut and remove excess pastry
- Brush top of roll with milk
- Cut roll into pieces to desired length while ensuring base which
has 2 layers is at the bottom
- bake 20 - 30 mins in hot oven.
Serve with tomato sauce and sweet chilli sauce.
