Simple Chocolate Cake
Ingredients:
- 1/4 cup butter softened
- 1 cup sugar
- 1 tsp vanilla
- 2 eggs lightly beaten
- 1 1/4 cup self raising flour
- 3 tbsp cocoa
- 1 tsp baking soda
- 1 cup milk
Icing:
- 1/2 cup dark chocolate
- 3 tbsp butter
- 1/4 cup double cream
Directions Cake:
- Place butter sugar and vanilla in bowl and beat until light and fluffy
- Gradually beat in eggs
- Sift flour, coca and baking soda in a bowl
- Fold flour mixture and milk alternately into egg mixture
- Pour mixture into greased and lined 18cm square tin
- 180 degree oven for 40 mins
- Leave in tin 5 mins before turning out
Directions Icing:
- Place chocolate, butter and cream in heatproof bowl over saucepan of simmering water
- heat, stirring constantly until mixture is smooth
- cool slightly and spread over cake
