- 1 and 1/4 cups olive oil
- salt
- 1 large onion
- 2 cloves garlic
- herbs: oregano, parsley, thyme, fresh basil
- 1 eggplant
- 2 zuccinis (about the same quantity as the eggplant in total)
- 1.5 cups mushrooms, chopped
- 3 large tomatoes, chopped. About 1.5 cups
- Put 1/4 cup olive oil + salt into a large baking dish
- chop onion into segments then add
- sliced or crush the garlic, and add along with the herbs
- add the chopped eggplant, zuccinis, mushrooms, tomatoes
- Add fresh basil and salt and pepper to taste
- Pour over 1 large cup of oil.
- Cook one hour 180 C on fan forced oven setting
