Preparation time 30 minutes + 45 minutes cooking (or more - 40 mins for mini quiches)
Make your favourite pastry, or use bought pastry.
Filling Ingredients
- 1 tablespoon oil
- 2 onions, finely chopped
- 3 cloves garlis, crushed
- 1 teaspoon curry powder
- 3 eggs
- 1/2 cup thick (double) cream
- 1 cup mashed cooked pumpkin (about 350g raw pumpkin)
- 2 teaspoons cummin seeds
Method
- Preaheat oven to hot - 210 °C
- Roll out pastry and line greased quiche flan.
- Bake 15 minutes until lightly browned.
- Remove from oven, reduce temp to 180 °C
- Combine eggs, cream and pumpkin in a large bowl. Beat until combined, set aside.
- Heat oil, add onions and garlic and stir over a low heat for 5 mins or until soft.
- Add curry powder, stir for one minute
- Spread onion over pastry.
- Pour combined egg mixture over onion in the pastry case
- Sprinkle with cumin seeds.
- Bake for 20 to 30 minutes until filling has set.
