Orange and Almond Cake

Ingredients

  1. 2 reasonable sized navel oranges
  2. 250gms caster sugar
  3. 250gms ground almonds
  4. 1tspn baking powder
  5. 6 eggs

Method

  1. Boil oranges for one and a half to two hours and then allow to cool. (Make sure that you top up water so that they don't boil dry)
  2. Cut the oranges into segments and then process with all remaining ingredients.
  3. Pour into a 22cm cake tin which has been lightly greased and lined with greaseproof paper.
  4. Bake for 50-60 minutes at 180 degrees.
