Mini Christmas Puddings

This is a great Christmas recipe. Easy to prepare, fun to make and yummy to eat.
Ingredients:
- 1 purchased Christmas cake (about 800g)
- 30 g butter
- 2 tsp port (optional)
- 1 cup white chocolate melts
- 1 pkt glace cherries (red and green)
Method:
- In a large bowl, break up the Christmas cake and make it into crumbs
- To moisten the crumb mixture, add in the butter and port (if desired)
- Roll the mixture into small balls (about the size of a golf ball)
- Place on lamington tray (covered with foil)
- Melt the white chocolate (about 1 minute in the microwave)
- Place 1 teaspoon of melted chocolate on the mini Christmas puddings
- Decorate each pudding with half a glace cherry
- Enjoy!
