Lemon Delicious Pudding

  1. Preheat oven to 160C (fan-forced)

  2. Grease a baking dish with butter.

  3. Cream together the butter and sugar, then add the lemon zest and optional marmalade and mix until combined.

  4. Add the egg yolks one at a time, beating well between each addition.

  5. Add the flour and milk alternately, mixing in small portions at a time.

  6. Slowly add and mix in 100ml of the lemon juice.

  7. Whisk the egg whites until peaks form (in a clean dry bowl).

  8. Add 1/3 of the egg whites to the lemon mixture and gently fold in. Then gently fold in the remaining egg whites.

  9. Pour the mixture into the prepared baking dish and place in a deep-sided hot water bath.

  10. Cook for 40 minutes, or until risen and golden on top.

  11. Remove from the oven and dust with a flourish of icing sugar.

  12. Serve Warm with cream - or leave to cool and put into the fridge to serve chilled.
