60g butter, softened
1 cup caster sugar
3 lemons zested, juiced
1 tablespoon Seville Marmalade (optional)
3 large eggs, separated
70g self raising flour
1¼ cup milk
Instructions
Preheat oven to 160C (fan-forced)
Grease a baking dish with butter.
Cream together the butter and sugar, then add the lemon zest and optional marmalade and mix until combined.
Add the egg yolks one at a time, beating well between each addition.
Add the flour and milk alternately, mixing in small portions at a time.
Slowly add and mix in 100ml of the lemon juice.
Whisk the egg whites until peaks form (in a clean dry bowl).
Add 1/3 of the egg whites to the lemon mixture and gently fold in. Then gently fold in the remaining egg whites.
Pour the mixture into the prepared baking dish and place in a deep-sided hot water bath.
Cook for 40 minutes, or until risen and golden on top.
Remove from the oven and dust with a flourish of icing sugar.
Serve Warm with cream - or leave to cool and put into the fridge to serve chilled.
