Lemon Cake
Ingredients
- 5 eggs
- 2 cups caster sugar
- 3 cups plain flour
- 4 tspn baking powder
- 1/2 tspn salt
- grated rind of 2 lemons
- 1 tbsp vanilla essence
- 600ml thickened cream
- juice 2 lemons
- 1/3 cup castor sugar
Method
- Beat eggs and sugar till thick and pale yellow
- Sift together flour, baking powder and salt
- Mix together vanilla, cream and grated lemon rind
- Add flour mixture and cream mixture to egg mixture
- Bake at 160 degrees for 1-1 1/2 hours
- Heat together juice and sugar in a saucepan till sugar is dissolved, spoon over warm cake and cool in tin
