Lemon Cake

Ingredients

  1. 5 eggs
  2. 2 cups caster sugar
  3. 3 cups plain flour
  4. 4 tspn baking powder
  5. 1/2 tspn salt
  6. grated rind of 2 lemons
  7. 1 tbsp vanilla essence
  8. 600ml thickened cream
  9. juice 2 lemons
  10. 1/3 cup castor sugar

Method

  1. Beat eggs and sugar till thick and pale yellow
  2. Sift together flour, baking powder and salt
  3. Mix together vanilla, cream and grated lemon rind
  4. Add flour mixture and cream mixture to egg mixture
  5. Bake at 160 degrees for 1-1 1/2 hours
  6. Heat together juice and sugar in a saucepan till sugar is dissolved, spoon over warm cake and cool in tin
