- 100g butter
- ½ cup (100g) brown sugar
- ¼ cup (115g) golden syrup
- 2 teaspoons ground ginger
- ½ teaspoon cinnamon
- ½ teaspoon carb soda
- 1 ½ cups (225g) plain flour
- Preheat oven to 180°C;
- Lightly grease a biscuit tray
- Melt first 3 ingredients together in a saucepan over low heat, then beat in a large bowl until light and fluffy. Allow to cool slightly.
- Sift together remaining (dry) ingredients, then fold into the wet mixture
- Roll tablespoons into balls, flatten onto baking trays with a fork
- Bake for 15minutes.
- 2 ¾ cups self-raising flour (2 cups)
- 1 teaspoon baking soda (2tsp)
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- ¼ teaspoon of cloves (1tsp)
- 1 cup brown sugar, packed
- ¾ cup margarine or butter, softened
- 1 egg
- ¼ cup light molasses
- Preheat oven to 350°F
- Combine flour, soda, and spices in a bowl and set aside.
- Cream sugar and margarine.
- Beat in egg and molasses until light and fluffy.
- Stir in flour mixture just until blended.
- Chill for 2 hours or more.
- Shape dough into 3/4-inch balls, roll in granulated sugar, and place
on lightly greased baking sheets about 2 inches apart.
- Flatten each ball with the bottom of a glass dipped in sugar.
- Bake about 18 minutes, until set. Makes 8 dozen
