Fruit Loaf

Ingredients:

Optional Extras: 1 cup chopped pecans, 1 egg

Method:

  1. preheat oven to 180 degrees celsius
  2. pour boiling water over the dates, butter, sugar, golden syrup and bicarb soda. Stir to dissolve the butter and sugar. Leave to cool but not cold. Optional: Mix in the optional egg.
  3. Grease a small to medium sized loaf pan.
  4. Mix in the flour and the optional nuts.
  5. Bake for about 45-50 minutes - until a skewer comes out clean.

This also works quite well if you want to leave out the butter, and substitute a grated apple instead.
