Fruit Loaf
Ingredients:
- 1 cup chopped dates
- 1 tablespoon butter
- 1/4 cup brown sugar
- 1 dessertspoon golden syrup
- 1 teaspoon bicarb soda
- 1 cup boiling water
- 3/4 cup plain flour
- 3/4 cup Self Raising flour
Optional Extras: 1 cup chopped pecans, 1 egg
Method:
- preheat oven to 180 degrees celsius
- pour boiling water over the dates, butter, sugar, golden syrup and
bicarb soda. Stir to dissolve the butter and sugar. Leave to cool but
not cold. Optional: Mix in the optional egg.
- Grease a small to medium sized loaf pan.
- Mix in the flour and the optional nuts.
- Bake for about 45-50 minutes - until a skewer comes out clean.
This also works quite well if you want to leave out the butter, and
substitute a grated apple instead.
