Ingredients
85g butter, softened
85g caster sugar
225g Pitted Dates, roughly chopped
1 teaspoon bicarbonate of soda
120mk boiling water
1 egg
225g self raising flour
85g walnuts, roughly chopped
Instructions
Preheat oven to 150°C (fan-forced), or 170°C
Line a loaf tin with baking papaer
Place the dates, carb soda, butter and sugar in a large bowl and pour over the boiling water. Mix to melt the butter, then set aside to cool
Add the egg, walnuts, mix to combine.
Add the flour mix again.
Transfer to the loaf pan and cook for 60 minutes, or until risen and golden on top.
Remove from the oven and cool in hte tin for 10 minutes before turning out.
Serve warm or keep in an airtight container for a couple of days.
