Best Ever Chocolate Brownies
Best ever brownies are a bit like the "Best Ever Olympics"?
Ingredients:
- 90 g (3 oz) dark chocolate
- 125 g (4 oz) butter or margarine
- 2 eggs
- 1 cup sugar
- 1 teaspoon vanilla essence
- 1/2 cup flour, sifted
- 1/8 teaspoon salt
- 3/4 cup walnuts, chopped
- 1 packet choc bits
- ½ cup sour cream
Method:
- Grease [and line] a 20 x 20 x 5 cm pan ( 8 x 8 x 2 in)
- Melt chocolate and butter in a small saucepan over low heat; cool
- Beat eggs in small bowl of mixer.
- Gradually beat in sugar until mixture is fluffy-thick.
- Stir in the cooled chocolate mixture and vanilla essence
- Fold in flour and salt until well blended.
- Stir in walnuts
- Spread evenly in prepared pan and bake in a moderate oven for 30 minutes, or until shiny and firm on top.
- Cool completely in pan on a wire rack.
- Melt chocolate bits in top of a double saucepan over hot water.
- Stir until smooth.
- Remove from heat and stir in the sour crea until well blended.
- Spread frosting on the cooled brownies.
- Cut into 16 squares.
Notes:
My pan was 9 x 9 in so I scaled the quantities to 120g dark chocolate, 167 g butter, 3 eggs, 4/3 cup sugar, 2/3 cup flour, 1 cup walnuts. Chocolate used was Cadburies dark cooking chocolate, and 230g cadbury dark chocolate baking chips. Oven temp was 180 degreesC and the pizza stine had been left in the oven during the pre-heat stage so the pan was placed directly onto it - I figured that if a crispy bottom pizza was good, so too would be a crispy bottomed brownie cake.
