Chocolate Rolled Oats Banana Cake
Cake Ingredients
- 2/3 cup milk
- 2 teaspoons lemon juice
- 125g soft butter
- 1 cup castor sugar
- 3 large ripe bananas
- 1 cup rolled oats
- 2 cups self raising flour
- 3 tablespoons cocoa
- 1 teaspoon bicarbonate soda
- 2 eggs beaten
- 3/4 cup chopped walnuts
Yoghurt Butter Frosting Ingredients
- 100g soft butter
- 3 tablespoons cocoa
- 3 cups icing sugar
- 1/4 cup natural yogurt
- 1 teaspoon vanilla
Cake Method
- Combine milk and lemon juice, stand until thickened.
- Cream butter and sugar in a bowl. Mash bananas roughly and beat into creamed mixture together with milk.
- Add rolled oats, then fold through other sifted dry ingredients.
- Add eggs, then walnuts.
- Pour into 2 butter and lightly floured 22cm round pans.
- Bake at 180C 35-40mins.
- Cool 5 minutes before turning out.
Icing
- Mix ingredients together and ice the cake.
