Carrot Cake
- Mix well together:
- 1 cup of oil
- 1 cup of brown sugar
- 3 eggs
- Sift and fold in
- 1 1/2 cups of self-raising flour
- 1 teaspoon of bicarb soda
- 2 teaspoons of cinnamon
- Add 250 grams of grated carrots and 3/4 cup of chopped walnuts.
- Bake in 20cm round baking tin at 180 C for 1 hour. Allow cake to cool.
- Combine 250g of cream cheese with several
tablespoons of honey (to taste) for cake icing.
