Capri Cake

  1. Preheat oven 170
  2. Grease and line 24 cm cake pan
  3. Melt butter, cool
  4. Finely chop chocolate
  5. Put egg yolks, sugar and vanilla in a bowl and beat until pale and thick
  6. Fold in chocolate, butter and almond meal.
  7. In separate bowl beat egg whites until stiff - gently fold into chocolate mixture
  8. Spoon into cake pan
  9. Bake 50-60 minutes - cool in pan
  10. Dust with icing sugar and serve with yoghurt/mascarpone/ice cream
