Cajun Salad Dressing

At long last the formula for Cajun salad dressing. Let me know how it goes.

Ingredients

  • 1 clove of garlic crushed
  • 1/3 cup of tomatoe dressing (not ketchup) some of the commercial brands will do if you don't make your own. e.g Rageletto.
  • 1/3 cup of vinegar
  • 1 teaspoon of Worchestershire sauce
  • 1 table spoon sugar
  • 1/4 teaspoon of tabasco
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of french style mustard
  • 1/4 teaspoon of pepper
  • salt (if desired to taste)
  • 1 cup of olive oil

Method

  1. Process all but the oil in a blender.

  2. slowly add the olive oil and continue to process.

  3. The dressing needs to be well shaken before serving as the oil and other liquid part company quickly.

  4. The dressing is particularly good served over tomatoes and onion topped with fresh basil.
