Armenian Nutmeg Cake
Ingredients:
- 1 cup self-raising flour
- 1 cup all-purpose flour
- 1 teaspoon ground nutmeg
- 4 oz butter
- 1 ½ cups brown sugar
- 1 teaspoon baking soda
- ¾ cup milk
- 1 lightly beaten egg
- ½ cup chopped pecan nuts (or walnuts)
Method:
- Grease [and line] a 20cmx30cm pan (at least 5cm deep)
- Sift flours and nutmeg into a large bowl.
- Rub in butter and mix in sugar (or process until crumbly).
- Press 1 1/2 cups of the mixture into prepared pan.
- Stir combined soda and milk into remaining dry ingredients with the egg and nuts.
- Mix well and pour into the pan on top of the first layer.
- Bake in a moderate oven about 35 minutes.
- Stand for 5 minutes then turn out onto a wire rack and cool.
- Cut into squares when cool.
