Very sweet, crispy at first, then they go a bit chewy (which is how I prefer them to be).
Makes 24 good sized biscuits, best spread over two biscuit trays as they expand outwards.
Ingredients
- 120g butter
- 1 tablespoon Golden Syrup
- 1 cup rolled oats
- 3/4 cup fine dessicated coconut
- 1 cup plain flour
- 1 cup sugar
- 1 teaspoon bicarb soda dissolved in 2 tablespoons boiling water
Method
- Preheat oven to 160 or 165 degrees C
- Melt the butter with the golden syrup slowly over a low heat, in a good sized saucepan
- Mix the dry ingredients in a large bowl
- Add the dissolved bicarb soda to the butter and syrup - be prepared for the froth up!
- Pour the hot mix into the dry ingredients, mix to combine
- Place spoonfuls onto greased trays
- Bake in a slow oven for 20 minutes, untilt he biscuits are golden
- Leave cool on the tray for about 5 minutes before moving to a wire rack
