Anzac Biscuits

Very sweet, crispy at first, then they go a bit chewy (which is how I prefer them to be).

Makes 24 good sized biscuits, best spread over two biscuit trays as they expand outwards.

Method

  1. Preheat oven to 160 or 165 degrees C
  2. Melt the butter with the golden syrup slowly over a low heat, in a good sized saucepan
  3. Mix the dry ingredients in a large bowl
  4. Add the dissolved bicarb soda to the butter and syrup - be prepared for the froth up!
  5. Pour the hot mix into the dry ingredients, mix to combine
  6. Place spoonfuls onto greased trays
  7. Bake in a slow oven for 20 minutes, untilt he biscuits are golden
  8. Leave cool on the tray for about 5 minutes before moving to a wire rack
